Recipe: BBQ Marinated Salmon

BBQ Marinated Salmon

  • 2x 150g salmon fillets
  • 1 large clove of garlic
  • 1 tablespoon muscovado or brown sugar
  • Half teaspoon finely diced chilli
  • 2 teaspoons fresh thyme
  • 1 teaspoon fennel seeds
  • 1 tablespoon lime juice
  • Salt and pepper

Add all marinade ingredients together in a bowl, add salmon fillets and refrigerate for about an hour.  Take a piece of aluminium foil, place the salmon and the marinade in the centre. Make a parcel leaving enough space for the salmon to steam.  Place the parcel on the BBQ until cooked through, approx 10 minutes (Times will vary)

Mango Salsa

  • 1 ripe mango, peeled, stoned and finely chopped
  • Half small cucumber, peeled, deseeded and finely chopped
  • Half small red onion, finely chopped
  • A handful of roughly chopped coriander
  • Zest of half a lime and two tablespoons of lime juice
  • Salt and pepper

Stir all ingredients together and season.  Allow the mixture to marinate for about an hour.

Avocado salad

  • 1 ripe avocado, peeled, stoned and cubed
  • 2 large tomatoes, cubed (with or without seeds)
  • A handful of roughly chopped parsley
  • 1 clove of garlic
  • Juice of approx. half a lemon.
  • 1 fresh chilli, deseeded and finely chopped
  • 1 spring onion, finely chopped
  • Handful of olives (optional) halved
  • Salt and pepper

Stir all ingredients together and season to taste. Serve immediately.
